Our Tray oysters are grown in nutrient rich waters off of Salt Spring Island on the East Coast of Vancouver Island. These tray oysters are suspended from rafts in pristine high current waters. The tumbling process creates a uniform deep cup & hard shell which gives consumers the optimum meat to shell ratio. The less abrasive tumbling give these oysters a unique fluting pattern & distinct look. TLC & mother nature deliver a briny flavour with a light metallic finish.
